Beef Stroganoff (Slow Cooker)

2 pounds ground beef
2 cans cream of mushroom soup
3/4 cup chopped onion
2 tablespoons Worchestershire sauce
1 cup sour cream
3/4 cup water
2 tablespoons minced garlic

egg noodles (cook just prior to serving dinner)

Fry beef in frying pan and let cool. Add all ingredients to slow cooker except egg noodles. Cook on low in slow cooker 4-6 hours. Serve over cooked egg noodles.
Serves 6-8

Freezer option: Brown ground beef and let cool. Put beef and all ingredients (except egg noodles) in a freezer bag. (For 4 servings you can divide into 2 meals since this recipe makes 6-8 servings) Thaw out in the fridge the night prior to cooking in the slow cooker. Cook on low 4-6 hours.

Beef Stew (Slow Cooker optional)


4 C. Potatoes (peeled & diced)
1 C. baby Carrots
1 C. Onion (chopped)
1 C. Celery (chopped)
2 C. diced stew meat or left over pot roast.
2 Tbs. Olive Oil
1 pkg Stew Seasoning Spices
1/3 C. Flour
1 tsp. Salt
1 tsp. Pepper
4 Cups Water

Prep the Meat:
Place flour, salt and pepper in large plastic bag and add stew meat. Shake unitl coated. In large pan on stovetop heat olive oil. Add flour covered meat and brown. Once browned on all sides (not cooked throughly) add water and seasoning spices and simmer on low for 20 minutes.
Cooktop Method:
After meat has simmered, add remaining vegetables and simmer another 45 minutes until vegetables are tender.

Slow Cooker Method:

After meat has simmered for 10 minutes, Place remaining vegetables in slow cooker and add meat mixture. Cook on low for 6-8 hours




Spaghetti with Meat Sauce



1 lb. ground beef
1 med onion, diced
1 jar. Spagetti sauce
1 tsp Garlic Salt
1 can diced tomatos, drained
1 pkg Spaghetti Noodles (cooked according to pkg)
Parmesan Cheese for topping

Make the Meal:
Boil water and cook spaghetti noodles according to package directions.
Brown ground beef and onion.
Season with garlic salt.
Drain excess grease and return meat to frying pan.
Add spaghetti sauce and diced tomatoes.
Simmer 10 minutes.
Serve over warm spaghetti noodles.

Texas BBQ /Pulled Pork Sandwiches (Slow Cooker)




1 Beef Briskit OR Pork Shoulder Butt
1-2 Bottles BBQ Sauce (depending on how much beef/pork you are cooking)
6-8 Hamburger Buns

Make the Meal:
Place meat on slow cooker and cook on low for 8-10 hours. ( you may cook overnight, if needed)
Shred with a fork, removing any remaining fat. Drain all grease.
Stir in BBQ sauce.
Serve atop hamburger buns.

Taco Salad


BEEF MIXTURE
1 Lb. Ground Beef
1 Can Refried Beans
1/2 C. Salsa
1 1/2 tsp onion powder
1/1/2 tsp season salt


TOPPINGS (all diced)
Lettuce
Cheese
Tomatos
Cilantro
Sour Cream
Avacado
Olives

Tortilla Chips

Make the Meal:
This is a layered version of salad.
Prepare the meat by:
Brown ground beef. Drain and add seasonings, refried beans and salsa. Stir until heated throughly.

Layer:
Tortilla Chips
Beef Mixture
Cheese (so it melts on the warm beef)
Lettuce
Tomatos.....etc.
Top with some of your favorite salsa and some sour cream.


This beef mixture also works well for Tacos!

Enchiladas (Slow Cooker option)



1 Pound Ground Beef
1 Onion
1 Clove Garlic
1 (10 3/4oz) Can Cream of Mushroom Soup
1 (4.5 oz) can Diced Green Chiles
1 (10oz)Can Enchilada Sauce (Red)
10 Corn Tortillas
3 C. Shredded Monterey Jack Cheese

Prepare the Beef Mixture:
In a frying pan on the stove, brown the Ground Beef, Onion and Garlic. Drain excess grease. Put meat mixture back in frying pan and add Cream of Mushroom Soup and undrained Chiles.

Layer ingredients in Slow Cooker
Spray the slow cooker with non-stick cooking spray. Spread 1/4 Cup of the Enchilada Sauce over the bottom. Then layer 4 Tortillas Then 1/3 of the Beef Mixture. Then add 1/4 Cup Enchilada Sauce Sprinkle 1C Cheese. Repeat until ingredients are gone. Cook 4 1/2 to 5 hours on Low in Slow Cooker.

Tips & Hints
This meal can be made ahead of time in the slow-cooker dish and refrigerated or frozen until you are ready to cook it. You can also make this meal in a casserole dish. Layer as directed, and bake at 375 degrees for 45 minutes.

Sloppy Joes



1 lb Ground Beef
1 (6oz) can Tomato Paste
1 (1.5oz) pkg Sloppy Joes spices and seasonings
1 1/4 C. water
6 Hamburger Buns

Make the Meal:
Brown ground beef in skillet. Drain.
Combine water, spices and tomato paste in bowl and pour into skillet with beef.
Bring to a boil and simmer uncovered 10 minutes.
Serve beef atop hamburger buns.

Shepherd's Pie



1 lb Ground Beef
1 (10oz) pkg frozen Mixed Vegetables
1/4 C. Water
1/2 C. chopped Onion
1 (10oz) can Condensed Tomato Soup
1 tsp Worchestershire Sauce
1/4 tsp Thyme, crushed
1/4 tsp Pepper
1 pkg, Instant Mashed Potatoes (serves 4

Make the Meal:
Run cold water over vegetables to thaw.
In large skillet, brown beef and onion.Drain any excess grease.
Stir in vegetables and water.
Cover and cook 5-7 minutes until vegetables are tender.
Stir in all remaining ingredients EXCEPT mashed potatoes.
Transfer meat mix to casserole dish.
Prepare mashed potatoes according to package directions.
Spread mashed potatoes across meat mix. Bake at 375* for 25-30 minutes.

Pot Roast (Slow Cooker option)



1 Pot Roast
6-8 Potatoes
1 1/2 lb bag baby carrots
1 Onion, diced
1 pkg. dry Onion Soup Mix
3/4 C. Flour
1 tsp Salt
1 tsp Pepper
3 Tbs Oil

Make the Meal:
Mix four, salt & pepper on a plate. Cover roast with flour mixture. In frying pan, warm oil. When hot fry "floured" roast until browned on outside edges. Remove from pan and place in roaster or slow cooker. Cut potatoes into quarters. In separate bowl, add potatoes, carrots, onion and onion soup mix. Stir so seasonings cover vegetables. Add vegetables to roaster or slow cooker.
If roasting in over, cover with lid and cook in over at 300* for 3 1/2 hours.
If using slow cooker, cover, and cook on low 7-8 hours.

Pizza Casserole (Slow Cooker option)


1 1/2 Lbs ground beef, cooked & drained
1 lb. sausage, cooked & drained
1 lb corkscrew pasta, cooked & drained
4 (14oz)jars pizza sauce
2 C. (8oz) shredded Mozzarella cheese
2 C. Parmesan Cheese (freshly grated)
2 (4oz) can mushrooms (drained)
2 (3oz) pkgs sliced pepperoni
1/2 C Onion (finely chopped)
1/2 C. Bell Pepper (finely chopped)
1 clove garlic

Slow Cooker:
Add all ingredients into slow cooker, stir and cook on low 4 hours or high 2 hours.


Oven:
Combine all ingredients in a bowl and transfer into baking dish coated with cooking spray. Cover with foil and cook at 375 degrees for 45 minutes.

Meatloaf



2 Lbs Ground Beef
1 pkg dried Beefy Onion Soup Mix
1 1/2 C Bread Crumbs
2 Eggs
3/4 C. Salsa
1/3 C. Ketchup
1 tsp season salt

Make the Meal:
Combine all ingredients and mix well. Place in loaf pan or 9x13 dish. Bake at 350* uncovered for 1 hour or until done. Let stand 10 minutes before serving. (serves 8)

Meat Lasagna


1/2 lb ground beef
1/2 lb ground italian sausage or pork
1 C. Onion, chopped
2 Tbs bottled Minced Garlic
1 (7 1/2 oz) can diced Tomatos
1 (8oz) can Tomato Sauce
1 (6oz) Tomato Paste
2 tsp dried Basil
1 tsp dried Oregano,crushed
1/2 tsp Salt
1/2 tsp Pepper
5 OZ (6 noodles) Lasagna Noodles
1 beaten Egg
2 C. Ricotta Cheese or cream cottage cheese, drained
1/2 c. grated Parmesan Cheese
1 Tbs. dried Parsley Flakes
1 (8oz) pkg, Mozzarella Cheese, sliced

Make the Meal:
This recipe serves 8. Make in two separate containers and freeze one for later. (or give to your favorite neighbor)

MEAT SAUCE
In large skillet, cook meat, onion and garlic until browned. Drain fat. Stir in undrained tomatos, tomato sauce, tomato paste, basil, oregano, salt and pepper. Bring to a boil and simmer 15 minutes, stirring occasionally.
Cook lasagna noodles according to package directions and drain.
FILLING
For filling combine egg, ricotta/cottage cheese, 1/4 c. parmesan cheese and parsley flakes. Stir.

LAYER
Layer half of the cooked noodles in baking dish. Spread with half of the filling, half of the meat sauce and top with half of the mozzarella cheese. Repeat layers. Sprinkle top with remaining parmesan cheese.

BAKE for 30-35 minutes at 375*, or until heated through.

Fajitas



1 lb Flank Steak or Carne Asada
1 large Yellow Onion, cut into strips
3 Bell Peppers (red, yellow, green)cut into strips
1 Tbs Olive Oil
Season Salt

MARINADE
Juice of 1 Lime
2 Tbs. diced Minced Garlic
1/2 tsp Cumin
1/2 tsp Chipotle Chili Powder
1/2 fresh Jalapeno Pepper, seeded and finely chopped (Don't touch eyes when handling, Use Gloves!)
1/4 C. Cilantro, fresh chopped

TOPPINGS
Tortillas
1/2 C Shredded Cheese
Salsa
Lettuce, shredded
Sour Cream
Guacamole

Make the Meal:
Combine all Marinade ingredients into plastic bag. Add Steak and let marinade at least 1 hour (better if overnight). When ready to cook, wipe off marinade and sprinkle with season salt.
In skillet heat olive oil and add steak when hot. Cook each side 3-4 minutes. Cook to desired tenderness.Remove from pan and cover with foil. While steak is resting, in skillet add another tablespoon of oil, add onions and peppers. Let seer for 1 minute without stiring. Then stir and cook to desired consistency. (no more than 5 minutes)
Slice the meat at an angle (against the grain)into thin strips. Serve with tortillas and toppings.

Chili Colorado

1 - 1 1/2 lb. London Broil (Cubed)
28 oz Can Red Enchilada Sauce
14 1/2 oz. can Beef Broth
1 Tbs. Chili Powder (to taste)

Steamed Rice
or
1 1/2 C. Grated Cheese
Flour Tortillas

Dice London Broil. In large stock pot combine enchilada sauce, beef broth and chili powder. Add London Broil and bring to a boil. Cover and simmer at least 45 minutes. The longer you simmer the meat....the more tender it is. Stir occasionally. Serve over a bed of steamed rice on warm flour tortilla topped with cheese.

Beefy Stuffed Shells

1/2 (12oz) pkg jumbo Pasta Shells
1 1/2 lbs. Ground Beef
1 Egg, lightly beaten
1 Tbs Olive Oil
1 tsp bottled Minced Garlic
1 tsp Garlic Salt
1 1/2 tsp Parsley
1/2 (8oz) pkg Cream Cheese, softened
3/4 (14oz) jar Pasta Sauce
1/4 C. Parmesan Cheese, Grated

Cook pasta according to package directions.
In skillet, brown beef, egg, oil, garlic, parsley & garlic salt.
Drain beef and transfer into mixing bowl. Add cream cheese and 1 C. pasta sauce. Mix.
Drain pasta.
Grease a baking dish. Stuff shells with beef mixture and place in dish. Cover evenly with remaining pasta sauce. Bake at 375* for 15 minutes, or until warmed throughly. Top with parmesan cheese just before serving.





Beef Stir Fry

1 lb Flank Steak
2 Tbs Olive Oil
1 C Broccoli
1 C. Cauliflour
(or 2 C. Frozen Stir Fry Vegetables)
1/2 tsp Ginger
1/2 tsp Garlic Powder
1 can Tomato Soup
1 Tbs Soy Sauce
1 Tbs Vinegar

Rice, steamed

Slice beef into thin strips. In skillet heat oil. Cook beef until browned. Remove from pan.
Reduce heat and stir fry vegetables, ginger & garlic powder until tender. Stir in soup, soy sauce and vinegar. Heat to a boil. Add beef. Heat throughly.
Serve over steamed rice.

Beef Rigatoni (Slow Cooker)


1 lb Ground Beef
1/2 C. Onion, chopped
2 Stalks Celery, Sliced thin
1/4 tsp Garlic Powder
1/8 tsp. Red Pepper Flakes
1/4 tsp. dried Thyme
1/4 tsp Salt
1/4 tsp Pepper
1 (10oz) Can condensed Tomato Soup
1/2 C. Beef Broth
1/1/2 Tbs. Worchestershire Sauce
1 C. Uncooked Rigatoni
1 C. Cheddar Cheese, grated

In skillet, brown ground beef, onion & celery. Drain and add in slow cooker. Cook pasta according to package directions. Drain and add to slow cooker. Add remaining ingredients, EXCEPT cheese. Stir and cook on low for 6 hours or high for 3 hours. Stir in cheese and cook for 5 minutes more intil cheese is melted.

Beef Oriental Casserole


1 lb Ground Beef
1/2 C. Onion, chopped
1/4 C. Green Pepper, diced
1 C. Elbow Macaroni (cooked)
1 (16oz) can sliced water chestnuts, undrained
1 (101/2oz) can Cream of Celery Soup
1 C. Milk
1 (2oz) jar Pimento
1 Tbs. Soy Sauce
1/2 C. Chow Mein Noodles
 
Cook macaroni according to pkg instructions.
In skillet, brown beef, onion & green pepper. Add cooked macaroni and remaining ingredients EXCEPT chow mien noodles. Bring to a boil and cover and simmer 10-15 minutes. Serve and sprinkle chow mien noodles on top.

Barbecued Hamburgers

Meat
1 lb Ground Sirloin
1 egg
1 tbs Worchestershire Sauce
3 Tbs BBQ Sauce
1 pkg Dried Onion Soup Mix

Assembly
1 Pkg 4-Hamburger buns (freeze any remainders)
4 Iceberg Lettuce Leaves
1 Tomato
1 small Red Onion, thinly sliced
4 slices Cheddar Cheese
dill pickle chips
ketchup, mustard

In large bowl, combine meat, egg, worchestershire & bbq sauce and dry soup mix. Mix with hands until all ingredients are evenly combined. Form into 4 hamburger patties. Cook on grill until throughly cooked.
Prepare burgers by layering cooked beef patties, cheese, onion, tomato and pickles. Top with ketchup and mustard.

BBQ Beef Casserole

  • 1 1/2 lb. Ground Beef
  • 2 Cans Biscuits
  • 1 tsp. Salt
  • 1 C. Shredded Cheese
  • 28 oz. Can Pork & Beans
  • 2 Tbs. Brown Sugar
  • 3/4 C. Barbecue Sauce
