Ham Casserole


2 Cups diced Ham
6 Medium Potatoes (diced)
1 Medium Onions (diced)
2 cans Cream of Mushroom Soup
1 Can water (empty soup can)

Dice, Stir, Cook:
Peel potatoes, if desired.
Dice ham, potatoes, and onions. Place in a bowl.
In separate small bowl, add cream of mushroom soup and a empty soup can full of water.
Stir soup and pour over potato mixture. Stir. Place in 9x13 casserole dish and cook at 350 degrees for 1 1/2 hours.


Hints & Tips:
You can substitute a can of Spam for ham in recipe.

Shepherd's Pie



1 lb Ground Beef
1 (10oz) pkg frozen Mixed Vegetables
1/4 C. Water
1/2 C. chopped Onion
1 (10oz) can Condensed Tomato Soup
1 tsp Worchestershire Sauce
1/4 tsp Thyme, crushed
1/4 tsp Pepper
1 pkg, Instant Mashed Potatoes (serves 4

Make the Meal:
Run cold water over vegetables to thaw.
In large skillet, brown beef and onion.Drain any excess grease.
Stir in vegetables and water.
Cover and cook 5-7 minutes until vegetables are tender.
Stir in all remaining ingredients EXCEPT mashed potatoes.
Transfer meat mix to casserole dish.
Prepare mashed potatoes according to package directions.
Spread mashed potatoes across meat mix. Bake at 375* for 25-30 minutes.

Meat Lasagna


1/2 lb ground beef
1/2 lb ground italian sausage or pork
1 C. Onion, chopped
2 Tbs bottled Minced Garlic
1 (7 1/2 oz) can diced Tomatos
1 (8oz) can Tomato Sauce
1 (6oz) Tomato Paste
2 tsp dried Basil
1 tsp dried Oregano,crushed
1/2 tsp Salt
1/2 tsp Pepper
5 OZ (6 noodles) Lasagna Noodles
1 beaten Egg
2 C. Ricotta Cheese or cream cottage cheese, drained
1/2 c. grated Parmesan Cheese
1 Tbs. dried Parsley Flakes
1 (8oz) pkg, Mozzarella Cheese, sliced

Make the Meal:
This recipe serves 8. Make in two separate containers and freeze one for later. (or give to your favorite neighbor)

MEAT SAUCE
In large skillet, cook meat, onion and garlic until browned. Drain fat. Stir in undrained tomatos, tomato sauce, tomato paste, basil, oregano, salt and pepper. Bring to a boil and simmer 15 minutes, stirring occasionally.
Cook lasagna noodles according to package directions and drain.
FILLING
For filling combine egg, ricotta/cottage cheese, 1/4 c. parmesan cheese and parsley flakes. Stir.

LAYER
Layer half of the cooked noodles in baking dish. Spread with half of the filling, half of the meat sauce and top with half of the mozzarella cheese. Repeat layers. Sprinkle top with remaining parmesan cheese.

BAKE for 30-35 minutes at 375*, or until heated through.
