Ham Casserole
2 Cups diced Ham
6 Medium Potatoes (diced)
1 Medium Onions (diced)
2 cans Cream of Mushroom Soup
1 Can water (empty soup can)
Dice, Stir, Cook:
Peel potatoes, if desired.
Dice ham, potatoes, and onions. Place in a bowl.
In separate small bowl, add cream of mushroom soup and a empty soup can full of water.
Stir soup and pour over potato mixture. Stir. Place in 9x13 casserole dish and cook at 350 degrees for 1 1/2 hours.
Hints & Tips:
You can substitute a can of Spam for ham in recipe.

Cream Cheese Chicken & Rice
6 boneless skinless chicken breasts
1 Jar Salsa (thick & chunky)
2 (8oz) Cream Cheese, softened
1 (29oz) can Enchilada Sauce
3 C. Instant Rice, uncooked
Make the Meal:
Preheat over to 350*.
In large freezer bag, use a meat tenderizer to flatten chicken breasts to 1/4" thickness.
Measure 3/4 C. drained Salsa and beat with Cream Cheese.
Divide mixture into flattened chicken breasts.
Roll stuffed breasts up like you would a tortilla.
Place breasts in 9x13 baking dish.
Set aside 1/2 C. salsa.
Mix remaining salsa and enchilada sauce.
Stir uncooked rice into enchilada sauce mixture.
Pour rice into 9x13 dish around chicken.
Pour remaining 1/2 c. salsa on top.
Bake at 350* for 45 minutes, or until cooked throughly.

Chocolate Obsession Cake
2 C. Sugar
2 C. Flour
1 C. Butter
1/2 C. Buttermilk
2 Eggs (slightly beaten)
1 tsp. Cinnamon
1 tsp. Baking Soda
1 tsp. Vanilla
ICING:
1/2 C. Butter
4 Tbs. Cocoa
1/3 C. Milk
2 C. Powdered Sugar
1 tsp. Vanilla
1 C. Chopped Walnuts or Pecans
Make the Cake:
Grease and Flour a 9x13 pan. Combine sugar and flour and set aside. In a medium sauce pan, melt butter with cocoa and water; bring to a boil. Pour mixture over sugan and flour and mix well.
Add buttermilk, eggs, cinnamon, soda and vanilla. Mix unitl smooth. Pour into pan and bake at 400 degrees for 20-30 minutes. (toothpick test)
Make the Icing:
In a saucepan, melt the butter and cocoa. Bring to a boil. Remove from heat and add remaining ingredients (including nuts). Mix until smooth and spread over warm cake.

To "toothpick test" simply insert a toothpick into the center of the cake when the baking time is done. If it comes out gooey cook longer. If it comes out clean, the cake is done.

Chineese Chicken Salad
- 4 Boneless Skinless chicken breasts (or 3 C. precooked chicken breasts)
- 1 head of lettuce
- 6 green onions (sliced thin)
- 2 Tbs Sesame Seeds
- 2 Tbs sliced Almonds
- 2 Pkgs Ramen (uncooked) and bullion pack
1/4 C. Sugar
1/2 tsp. peper
1/3 C. Vinegar
1/3 C. Olive Oil
1/2 tsp. Salt
Make the Salad:
Cook Chicken and shred with a fork.
Combine chicken, chopped lettuce, onions, sesame seeds, and almonds in salad bowl.
Break up uncooked ramen and add to salad. Sprinkle 1/2 of bullion package over salad.
Dressing:
Combine dressing ingredients in a plastic bag or shaker container. Pour dressingover salad.

Brown Butter Pasta
1 pkg. Angel Hair Pasta
1/2 c. butter
1/4- 1/2 c. Mizritha Cheese, finely grated
Fast and Easy:
Cook pasta according to package directions. Drain. Pour into a bowl.
In frying pan, melt butter just until it turns golden brown.
Remove immediately from heat, as it can burn easily.
Pour over pasta and stir.
Serve pasta and sprinkle Mizritha on top.

Beef Stew (Slow Cooker optional)
4 C. Potatoes (peeled & diced)
1 C. baby Carrots
1 C. Onion (chopped)
1 C. Celery (chopped)
2 C. diced stew meat or left over pot roast.
2 Tbs. Olive Oil
1 pkg Stew Seasoning Spices
1/3 C. Flour
1 tsp. Salt
1 tsp. Pepper
4 Cups Water
Prep the Meat:
Place flour, salt and pepper in large plastic bag and add stew meat. Shake unitl coated. In large pan on stovetop heat olive oil. Add flour covered meat and brown. Once browned on all sides (not cooked throughly) add water and seasoning spices and simmer on low for 20 minutes.
Cooktop Method:
After meat has simmered, add remaining vegetables and simmer another 45 minutes until vegetables are tender.
Slow Cooker Method:
After meat has simmered for 10 minutes, Place remaining vegetables in slow cooker and add meat mixture. Cook on low for 6-8 hours
Spaghetti with Meat Sauce
1 lb. ground beef
1 med onion, diced
1 jar. Spagetti sauce
1 tsp Garlic Salt
1 can diced tomatos, drained
1 pkg Spaghetti Noodles (cooked according to pkg)
Parmesan Cheese for topping
Make the Meal:
Boil water and cook spaghetti noodles according to package directions.
Brown ground beef and onion.
Season with garlic salt.
Drain excess grease and return meat to frying pan.
Add spaghetti sauce and diced tomatoes.
Simmer 10 minutes.
Serve over warm spaghetti noodles.

Roasted Potatoes
4-6 Med. Potatoes
1/4 C. Olive Oil
1 tsp Seasoning Salt
1 tsp Garlic Salt
1 tsp Onion Powder
Make the Meal:
Cut potatoes into chunks.
Place in plastic bag.
Combine olive oil and seasonings. Pour in bag and shake until potatoes are covered in oil.
Transfer potatoes to baking sheet and bake at 375* for 30 minutes.
Enjoy!
Pork Chops (Slow Cooker)
4-6 thick Pork Chops
2 Cans Cream of Mushroom Soup
6 Tbs Flour
4 Tbs Olive Oil (or oil)
1 tsp Salt
1 tsp Pepper
Make the Meal:
Combine flour, salt and pepper in large ziploc bag or bowl.
Add in pork chops and shake until they are covered with flour.
In skillet, warm olive oil. Brown pork chops on both sides. Do not cook throughly.
Place browned pork chops in slow cooker.
Pour cream of mushroom soup over chops.
Cook on low 7-8 hours.
Chops will be very tender and tasty!
Reserve gravy in slow cooker to top mashed potatoes.

Peanut Butter Cookies
1/2 C. Butter, softened
1/2 C. Peanut Butter
1/2 tsp. Vanilla
1/2 C. Sugar
1/2 C. Brown Sugar
1 1/4 C. Flour
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder
Mix it up:
Combine Butter, Peanut Butter, Vanilla, Sugar, Brown Sugar and egg in mixer.
In sifter combine Flour, Soda & Baking Powder.
Sift into wet ingredients.
Just stir until combined. Don't over-mix.
Roll into balls and place on cookie sheet.
Press down with a fork.
Bake at 375* for 8-10 minutes.
Variation:
Add in a cup of mini-chocolate chips for some chocolatey goodness.

Mexican Pork Roast (Slow Cooker)
1 Pork Roast
1 Can Tomato Sauce
1 Can El Pato Sauce, Green
3/4 C. Brown Sugar
2 Tbs diced Minced Garlic
Cooking Instructions:
Place Pork Roast in bottom of slow cooker.
Combine remaining ingredients and pour over Roast.
Cook 6-8 Hours on low. Shred and return to juices for 1 more hour.

Texas BBQ /Pulled Pork Sandwiches (Slow Cooker)
1 Beef Briskit OR Pork Shoulder Butt
1-2 Bottles BBQ Sauce (depending on how much beef/pork you are cooking)
6-8 Hamburger Buns

Make the Meal:
Place meat on slow cooker and cook on low for 8-10 hours. ( you may cook overnight, if needed)
Shred with a fork, removing any remaining fat. Drain all grease.
Stir in BBQ sauce.

Teryaki Pork Loin (Slow Cooker)
1 Pork Loin
2 C. Water
2 C. Brown Sugar
2 C. Soy Sauce
1 1/2 Tsp Smoke Flavor
2 Tsp. Garlic
1 Tsp. Sesame Seed Oil
1 Tsp. Ginger
Compile in Slow Cooker:
Place Pork Loin in bottom of slow cooker. Mix all ingredients in a bowl. Pour over Pork Loin and cook in slow cooker for 6 hours on low.
Enjoy!
Taco Soup
1 lb Ground Beef
1/2 medium Onion, Diced
1/2 tsp chipotle chili powder
2 cans Crushed Tomatos
1 Pkg Taco Seasoning Mix
1 can Kidney Beans, Drained
1 can Black Beans, Drained
2 cans Tomato Sauce
TOPPINGS
Sour Cream
1 C. Grated Cheese
1 avocado, diced
Tortilla chips, corn chips or Doritos
Make the Meal:
Brown hamburger and onion with seasoning pkg and chili powder. Drain. Add remaining ingredients and let simmer 20 minutes.
Distibute to bowls and top with grated cheese, avocado, and crushed chips.
Enjoy!
Taco Salad
BEEF MIXTURE
1 Lb. Ground Beef
1 Can Refried Beans
1/2 C. Salsa
1 1/2 tsp onion powder
1/1/2 tsp season salt
TOPPINGS (all diced)
Lettuce
Cheese
Tomatos
Cilantro
Sour Cream
Avacado
Olives
Tortilla Chips
Make the Meal:
This is a layered version of salad.
Prepare the meat by:
Brown ground beef. Drain and add seasonings, refried beans and salsa. Stir until heated throughly.
Layer:
Tortilla Chips
Beef Mixture
Cheese (so it melts on the warm beef)
Lettuce
Tomatos.....etc.
Top with some of your favorite salsa and some sour cream.
This beef mixture also works well for Tacos!
