8 (8inch) flour Tortillas
1 (15.5 oz) can Black Beans, drained and rinsed
1 (10oz) can whole kernel corn, drained
1/2 Tbs Brown Sugar
1/4 C. Salsa
1/4 tsp. Red pepper flakes
3 Tbs Onion, finely chopped
2 tsp Olive Oil
1 1/2 C. Monterey Jack Cheese, Grated
TOPPINGS
Salsa
Sour Cream
Guacamole
Make the Meal:
In non-stick skillet, warm olive oil. Add onion and cook until softened.
Add black beans, corn, sugar, salsa and pepper flakes.
Cook until heated. (3-5 min)
Warm separate non-stick skillet.
Place tortilla in skillet.
Sprinkle with cheese and top with some of the
bean mixture. Place another tortilla on top. Flip when bottom tortilla
becomes golden brown. When both sides are golden brown and cheese is
melted, remove from heat.
Top with desired toppings.
